This Croissant French Toast Bake is my favorite way to turn leftover croissants into something special. The buttery layers soak up a sweet custard and bake into a soft, golden dish that feels like a cozy weekend morning.

Why This Recipe Works
I make this Croissant French Toast Bake when I want breakfast to feel cozy, easy, and just a little fancy. Here’s what makes it special:
- Buttery Layers: The croissants soak up the custard beautifully, giving you a soft, creamy center with crisp, golden edges. It’s that same baked comfort I love in my Easy Oven Baked French Toast.
- Creamy Pockets: Dollops of whipped cream cheese mixed with jam melt into the bake, creating little bursts of sweetness in every bite. It’s a flavor combo that reminds me of my Strawberry Cream Cheese Stuffed French Toast.
- Make-Ahead Friendly: You can prep it the night before, let it soak in the fridge, and bake it fresh in the morning. It’s perfect for holidays, brunches, or lazy weekends.
- Perfectly Balanced Sweetness: The maple syrup and berries bring just enough sweetness without being heavy. A dusting of powdered sugar on top ties it all together.
- Crowd-Pleasing Brunch Dish: It looks impressive but couldn’t be easier to make. Everyone always goes back for seconds, and it’s just as good reheated the next day.

Ingredients
- Eggs – The base of the custard that binds everything together and gives the bake its soft, rich texture.
- Whole Milk – Adds creaminess and helps create a smooth custard. You can use half-and-half or a mix of milk and cream for an even richer result.
- Maple Syrup – Brings natural sweetness and a warm flavor that pairs perfectly with the buttery croissants. Honey or brown sugar can work if you don’t have maple syrup.
- Croissants – The star of the dish. Their flaky, buttery layers soak up the custard beautifully while staying crisp on top. Slightly stale croissants work best.
- Jam – Adds fruity sweetness and color throughout the bake. Use your favorite flavor like blueberry, strawberry, or blackberry.
- Whipped Cream Cheese – Creates creamy pockets that melt into the croissants. Regular cream cheese works too, just soften it before mixing.
- Berries – Fresh or frozen berries add bursts of sweetness and a pop of color. Blueberries, strawberries, or blackberries all work well.
- Powdered Sugar – A light dusting before serving adds a touch of sweetness and a pretty finish.

Instructions
- Prep Dish: Grease a 9×13-inch baking dish generously with butter to prevent sticking and add extra flavor.
- Make Custard: In a large mixing bowl, whisk together eggs, whole milk, maple syrup, and vanilla extract until smooth and well combined.
- Assemble Base: Tear croissants into quarters and arrange them evenly in the prepared baking dish. Pour the custard mixture over the croissants, gently pressing down to help them soak up the liquid.
- Add Filling: In a small bowl, mix whipped cream cheese with jam until smooth. Spoon dollops of the mixture between the croissant pieces and scatter half of the berries throughout.
- Chill: Cover the dish and refrigerate for at least 15 minutes or up to overnight to let the croissants absorb the custard.
- Bake: When ready to bake, preheat the oven to 375°F. Lay thin slices of butter over the top of the croissants, cover with foil, and bake for 40 minutes.
- Finish Baking: Remove the foil and bake for an additional 5–10 minutes until the top is golden brown and slightly crisp.
- Serve: Dust with powdered sugar, top with the remaining fresh berries, and drizzle with extra maple syrup before serving warm.

Substitutions & Variations
Here are some of my favorite substitutions and variations:
- Flavor Swaps: I like to switch up the jam depending on the season. Try raspberry in summer or apricot for a cozy fall version.
- Savory Option: Skip the jam and berries, and layer in cooked bacon or ham with shredded cheese for a brunch-style twist.

Yes, store-bought croissants work perfectly. In fact, slightly stale croissants are ideal because they soak up the custard better without getting soggy.
To avoid a soggy croissant French toast bake, opt for day-old croissants as they absorb liquid better without becoming too mushy.
Yes. Assemble the dish, cover it tightly, and refrigerate overnight. In the morning, bake it straight from the fridge, adding a few extra minutes to the baking time if needed.

Croissant French Toast Bake
Ingredients
- 6 large eggs
- 1 ½ cups whole milk
- 2 tablespoons maple syrup, plus more for serving
- 1 tablespoon vanilla extract
- 8 large croissants, roughly torn
- ⅓ cup jam, such as blueberry, strawberry, or blackberry
- 8 ounces whipped cream cheese, room temperature
- 6 tablespoons unsalted butter, thinly sliced
- 1 cup berries, divided (use blueberries, strawberries, or blackberries)
- 1 tablespoon powdered sugar, or more for serving
Instructions
- Grease a 9×13 inch-baking dish with butter.
- In a mixing bowl, whisk together the eggs, milk, maple syrup and vanilla.
- Tear the croissants into quarters. Arrange the torn croissants in the prepared baking dish. Pour the egg mixture over the croissants. Mix to cover the croissants.
- In a small bowl mix the cream cheese with the jam. Dollop in between the croissants and along with half the berries.
- Cover and place in the fridge for 15 minutes or up to overnight. When ready to bake, preheat the oven to 375 degrees F.
- Lay the sliced butter on top of the croissants. Cover with foil. Transfer to the oven and bake for 40 minutes. Uncover and bake for an additional 5-10 minutes.
- Serve warm, top with powdered sugar, fresh berries, and any additional maple syrup. Enjoy!
Notes
- Use day-old croissants. Slightly stale croissants soak up the custard better and hold their shape while baking.
- Mix the custard well. Whisk the eggs, milk, maple syrup, and vanilla until smooth for an even texture throughout the bake.
- Soak before baking. Let the croissants sit in the custard for at least 15 minutes or overnight to absorb all the flavor.
- Soften the cream cheese. Room-temperature cream cheese blends more easily with the jam and creates smooth, creamy pockets.
- Layer evenly. Spread the croissant pieces and cream cheese mixture evenly so every bite has a mix of textures and flavors.
- Add butter on top. The thin butter slices help the top brown beautifully and add extra richness.
- Bake covered first. Covering with foil keeps the inside soft and custardy, then uncover for the last few minutes to crisp the top.
- Check doneness. The center should be set but still soft, and the top golden brown. Add a few extra minutes if needed.
- Serve warm. The bake tastes best right out of the oven with a dusting of powdered sugar and fresh berries.
