So glad that I can go shopping at my local Fred Meyer and buy all the freshest organic cherries, stone fruit and berries for such a good price. I love that they make it accessible for their customers to buy organic. Perfect way to use them up and make galettes. The imperfectly shaped, but ohh so delicious dessert that will make you go back for another slice. One of my favorite stone fruits are CHERRIES. How can you resist the sweet red fruit that will surely stain your hands while you pit them for this dessert… but I promise you will be ok.
Memorial Day is around the corner and I spent the day grilling outside yesterday to create this delicious Grilled Asian Salmon on one sheet with mustard dressing. If you’ve been following me for a while on Instagram, you probably noticed how much I LOVE TOAST. I will never get bored with eating it, making it and coming up with fun ways to dress it up. From avocado to poached eggs or last night’s leftovers, the possibilities are endless. Mediterranean flavors came to mind when I was thinking of what to top this lovely toast with, so I created a creamy, velvety white bean spread. This MEDITERRANEAN TOAST WITH CREAMY WHITE BEAN SPREAD & ROASTED TOMATOES is my new favorite go to toast to make. The flavor of the spread is so velvety and garlicky… I mean who doesn’t love garlic, I do.
When it comes to baking, I like to keep things simple and use fresh and in season ingredients. When I was planning this recipe, there was so much beautiful local rhubarb at my local Fred Meyer, all cute and all sorts of shares of pink and red. Who is excited for SUMMER? Me, me, me. You know why? Because soon, it will be tomato season, grilling season, berry season and that means we will be eating caprese salads on repeat in our house. Something about the freshness of the salad from the tomatoes and basil and the creaminess of the buffalo mozzarella has me all sorts of giddy. When I was thinking of what to make next to share with you guys, I was in the store brainstorming and the idea came in my head to make burgers.

I think when most of us, while sick, crave a good soup? Well, I don’t know about you, but when I am, I crave cozy, simple soups like this Celeriac, Fennel and Sweet Potato soup. Plus all of the cold and rainy days Portland this winter, it has not helped. It comes together so quickly, which in my mind is always a good thing. This soup combines a few of my favorite root veggies and an addition of milk makes this a velvety and smooth in texture. (more…)
I have no idea why I have never made chili before? Maybe because I have tried some before and since I am not a big fan of beans, I tend to avoid eating them. But this chili, OMG it’s the best accidental chili I’ve ever had/made. The first time I experimented with this a few days ago, I was looking for that nice smokey flavor bacon gives and when I was getting the bacon, I saw a nice piece of ham hog and decided to add it in for more of that flavor, match made in heaven. Adding in the organic ground turkey meat and quinoa adds a good healthy option to the chili instead of using beef. Also, adding smoked gouda to top off the chili adds more of that smokey flavor I was going for. (more…)
Who doesn’t love a good lasagna? The only thing not to love about it is how it presented in the dish, but this rolled version solves all of the problems.
