Who is excited for SUMMER? Me, me, me. You know why? Because soon, it will be tomato season, grilling season, berry season and that means we will be eating caprese salads on repeat in our house. Something about the freshness of the salad from the tomatoes and basil and the creaminess of the buffalo mozzarella has me all sorts of giddy. I think when most of us, while sick, crave a good soup? Well, I don’t know about you, but when I am, I crave cozy, simple soups like this Celeriac, Fennel and Sweet Potato soup. Plus all of the cold and rainy days Portland this winter, it has not helped. It comes together so quickly, which in my mind is always a good thing. This soup combines a few of my favorite root veggies and an addition of milk makes this a velvety and smooth in texture. (more…)
I have no idea why I have never made chili before? Maybe because I have tried some before and since I am not a big fan of beans, I tend to avoid eating them. But this chili, OMG it’s the best accidental chili I’ve ever had/made. The first time I experimented with this a few days ago, I was looking for that nice smokey flavor bacon gives and when I was getting the bacon, I saw a nice piece of ham hog and decided to add it in for more of that flavor, match made in heaven. Adding in the organic ground turkey meat and quinoa adds a good healthy option to the chili instead of using beef. Also, adding smoked gouda to top off the chili adds more of that smokey flavor I was going for. (more…)
Who doesn’t love a good lasagna? The only thing not to love about it is how it presented in the dish, but this rolled version solves all of the problems. I figured this might be the perfect Valentines Day meal to make for your family or for a significant other. Plus it is so easy to make and makes for such a pretty presentation.

The first time I made these a few weeks ago I was doing an Instagram Live video and accidentally called them Hasselhoffs and that caught on and now that’s what I call them, jokingly. I don’t know about you guys, but we do taco Tuesday’s at our house often, because we just love them. But, sometimes on a cold winter evening I change it up and make my super easy tortilla soup instead. Soup is one of my favorite winter meals. With this soup you get the same great Mexican flavors as if you would if having tacos, but in a soup form. It’s the perfect soup to warm up around the table with my family. It takes me about 30 minutes, if that to make this.
