These ice cream sundaes, granola & berries are a healthier version than your usual sundaes. Sweet, crunchy and tart all in one bite, which is everything you could possibly want in something healthy and sweet. Match made in heaven.
1 1/2cupnuts (whatever you desire or have on hand - I used almonds, cashews, and pecans)
coconut flakes
vanilla bean extract
3/4cuptotal of other mixins like dried cherries, figs, apricots, blueberries

Instructions
Granola
Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper. Set aside.
Toss oats, nuts, coconut flakes and salt together in a bowl. In a separate bowl whisk together melted coconut oil, honey, vanilla bean extract.
Stir into oat mixture and spread onto the foil lined baking sheet. Bake for 15 mins, turning and stirring the granola half way through to prevent uneven browning.
Once your granola is finished baking, let it cool for 15 mins on the baking sheet.
When cooled, crumble the granola and stir in the dried fruit.
Sundaes
Assemble the sundaes by scooping a few scoops of ice cream in bowls or glasses, add the granola, berries and coconut flakes. Enjoy!
