Beer battered onion rings are super easy to make. Like… it could be a problem, they’re so easy. These onion rings are tender, sweet, lightly coated, crispy, and flavorful. I think when most of us, while sick, crave a good soup? Well, I don’t know about you, but when I am, I crave cozy, simple soups like this Celeriac, Fennel and Sweet Potato soup. Plus all of the cold and rainy days Portland this winter, it has not helped. It comes together so quickly, which in my mind is always a good thing. The air outside is nice and crisp and the weather calls for comforting dishes like this yummy simple spaghetti. It’s filled with roasted butternut squash, roasted garlic, crispy sage leaves, hazelnuts and shaved parmesan.
The season for pumpkin has officially arrived. The leaves are turning colors, the weather is cooling down. I walked into my local Fred Meyer store the other day and the all the fall colors were all over the front of the store. I spotted the pumpkins and decided to pick up a few of the smaller pumpkins and roast them for dinner. (more…)
Easy meals have been my go to lately with school starting up again. I like to keep a few packages of the Private Selection Gnocchi in my pasta drawer, you can find them in the pasta isle at Fred Meyers. I used one of my new favorite non stick pans for this recipe, Calphalon 3-Quart Saute Pan, recently got this as part of a complete set for a steal from my local Kroger store, Fred Meyer.
