If you’re looking for a striking side dish or appetizer that will impress your guests, try these mini hasselback potatoes with mustard sauce. The first time I made these a few weeks ago I was doing an Instagram Live video and accidentally called them Hasselhoffs and that caught on and now that’s what I call them, jokingly. These would be perfect for any summer party appetizer, lunch or dinner side.These are my new favorite to serve as a side dish with meat, fish or other veggies. I also think these make an excellent appetizer for a party, game day, or any other event. I made them for a birthday party we went to this afternoon and they were a hit. It was nice to have something different on the appetizer table for sure.
I could never turn down a crispy potato, friends. These are so delicious! The air outside is nice and crisp and the weather calls for comforting dishes like this yummy simple spaghetti. It’s filled with roasted butternut squash, roasted garlic, crispy sage leaves, hazelnuts and shaved parmesan.
The season for pumpkin has officially arrived. The leaves are turning colors, the weather is cooling down. I walked into my local Fred Meyer store the other day and the all the fall colors were all over the front of the store. I spotted the pumpkins and decided to pick up a few of the smaller pumpkins and roast them for dinner. (more…)
Easy meals have been my go to lately with school starting up again. I like to keep a few packages of the Private Selection Gnocchi in my pasta drawer, you can find them in the pasta isle at Fred Meyers. I used one of my new favorite non stick pans for this recipe, Calphalon 3-Quart Saute Pan, recently got this as part of a complete set for a steal from my local Kroger store, Fred Meyer.

Everyone should adopt a latke into their recipe rotation. (Because what’s not to love about fried potato pancakes?) The trick, whether you’re making them for Easter, brunch with friends or otherwise, is to get them super crispy. In mine I added crispy bacon inside for a little guilty pleasure, but with a healthy twist by topping them with a fresh fennel slaw mixed with citrus to brighten the color on the plate and to cut the fat of the bacon. This is a simple recipe to adapt to add your favorite things like zucchini, sweet potato, apples, carrot and or other veggies you might like more, the possibilities are endless. Tomorrow people will be gathering in homes, bars, stadiums to celebrate a big day for Football fans. Funny thing is I am not a fan of football at all, even tough I work on women’s apparel at Nike. My husband likes to watch it once in a while and I just enjoy the gathering around good food part with the gals. Tomorrow we are off to our friends house to celebrate a birthday and let the boys and gals who enjoy watching the game watch the game and the rest of us gather around a table with some good homemade meals. I am prepping a few dishes to bring with me. Wanted to make sure there are some healthy options to enjoy besides the chilly and other heavy foods that will be provided already. (more…)
