This fall weather has me feeling all sorts of good feelings these days. It’s now the end of summer, school began last week and the weather has been getting a bit chilly in the mornings. These flaky mini chicken pot pies have me thinking of cozying up by the fire, wearing sweaters and boots and watching the leaves change outside.FLAKY MINI CHICKEN POT PIESOne of the best things about fall coming is turning on the oven to cook our dinners at home to make the house smell good and feel cozy too. I’m kind of obsessed with these mini chicken pot pies. They taste like the ultimate comfort food and are the perfect meal to have on-hand when you only need one serving at a time or you are feeding your family.

This pan-fried halloumi & peach salad on a bed of arugula is the summer salad I can’t get enough of. Topped with homemade basil oil for the most vibrant of flavors, I have no doubt you will love this salad.

MEDITERRANEAN TOAST WITH CREAMY WHITE BEAN SPREAD & ROASTED TOMATOES

If you’ve been following me for a while on Instagram, you probably noticed how much I LOVE TOAST. I will never get bored with eating it, making it and coming up with fun ways to dress it up. From avocado to poached eggs or last night’s leftovers, the possibilities are endless. Mediterranean flavors came to mind when I was thinking of what to top this lovely toast with, so I created a creamy, velvety white bean spread. This MEDITERRANEAN TOAST WITH CREAMY WHITE BEAN SPREAD & ROASTED TOMATOES is my new favorite go to toast to make. The flavor of the spread is so velvety and garlicky… I mean who doesn’t love garlic, I do.

CAPRESE SALAD BURGER ON PRETZEL BUN

Who is excited for SUMMER? Me, me, me. You know why? Because soon, it will be tomato season, grilling season, berry season and that means we will be eating caprese salads on repeat in our house. Something about the freshness of the salad from the tomatoes and basil and the creaminess of the buffalo mozzarella has me all sorts of giddy. When I was thinking of what to make next to share with you guys, I was in the store brainstorming and the idea came in my head to make burgers.

BEST SMOKEY 30 MINUTE TURKEY QUINOA CHILI

I have no idea why I have never made chili before? Maybe because I have tried some before and since I am not a big fan of beans, I tend to avoid eating them. But this chili, OMG it’s the best accidental chili I’ve ever had/made. The first time I experimented with this a few days ago, I was looking for that nice smokey flavor bacon gives and when I was getting the bacon, I saw a nice piece of ham hog and decided to add it in for more of that flavor, match made in heaven. Adding in the organic ground turkey meat and quinoa adds a good healthy option to the chili instead of using beef. Also, adding smoked gouda to top off the chili adds more of that smokey flavor I was going for. (more…)

HEALTHY, EASY, CHICKEN TORTILLA SOUP

I don’t know about you guys, but we do taco Tuesday’s at our house often, because we just love them. But, sometimes on a cold winter evening I change it up and make my super easy tortilla soup instead. Soup is one of my favorite winter meals. With this soup you get the same great Mexican flavors as if you would if having tacos, but in a soup form. It’s the perfect soup to warm up around the table with my family. It takes me about 30 minutes, if that to make this.
