If you’ve been following me for a while on Instagram, you probably noticed how much I LOVE TOAST. I will never get bored with eating it, making it and coming up with fun ways to dress it up. From avocado to poached eggs or last night’s leftovers, the possibilities are endless. Mediterranean flavors came to mind when I was thinking of what to top this lovely toast with, so I created a creamy, velvety white bean spread.
Who is excited for SUMMER? Me, me, me. You know why? Because soon, it will be tomato season, grilling season, berry season and that means we will be eating caprese salads on repeat in our house. Something about the freshness of the salad from the tomatoes and basil and the creaminess of the buffalo mozzarella has me all sorts of giddy. When I was thinking of what to make next to share with you guys, I was in the store brainstorming and the idea came in my head to make burgers.

This fall weather has me feeling all sorts of good feelings these days. It’s now the end of summer, school began 2 weeks ago and the weather has been getting a bit chilly. But, I am excited to cozy up by the fire, wear sweaters and boots, watch the leaves change outside. One of the best things about fall coming is turning on the oven to cook our dinners at home to make the house smell good and feel cozy too. I’m kind of obsessed with these mini chicken pot pies. They taste like the ultimate comfort food and are the perfect meal to have on-hand when you only need one serving at a time or you are feeding your family.
Easy meals have been my go to lately with school starting up again. I like to keep a few packages of the Private Selection Gnocchi in my pasta drawer, you can find them in the pasta isle at Fred Meyers. I used one of my new favorite non stick pans for this recipe, Calphalon 3-Quart Saute Pan, recently got this as part of a complete set for a steal from my local Kroger store, Fred Meyer.
Lately I have been trying to keep our meals during the week quick and simple for my family. This simple pop tart recipe is easy to make and fun to involve kids too. I always keep a box or two of frozen puff pastry in my freezer for last minute meal ideas like this pop tart recipe. This is also a great appetizer idea when last minute guests come to visit or you need to go to a party and bring something tasty with you. (more…)
I am excited to share this healthy and delicious curried soup with asparagus, lentils, potatoes, shrimp topped with crunchy Curry Flavored Kettle chips. Sometimes I have an idea in my head that comes out a success, sometimes it doesn’t. This time the flavors worked and on the rainy day in Portland it was a perfect fix for something hearty and comforting. (more…)
While I don’t do Super Bowl Sunday’s or watch football at all, but doesn’t mean I can’t enjoy making good food that can be enjoyed during the game or a game night with friends. These Nachos and Guacamole with pineapples and edible flowers are my new favorites to enjoy and it’s nice because you can use them in so many different ways. Make tacos, burritos, nachos or even a salad bowl. (more…)
Salads are my favorite to make as a side dish or even on it’s own as the main dish. Trying to come up with creative new ideas for a salad with ingredients that you might not expect to taste are something I enjoy doing. This twist on this wedge salad for Fred Meyer has me wishing it was summer again. The fresh flavor of strawberries in the dressing adds a vibrant flavor to the wedge. I’m loving the crispy bacon for the smokey meaty flavor and creamy texture of avocado to bring it all together. Make it a whole meal by adding slices of steak, chicken or fish. (more…)
I’m working on a few recipe developments for Fred Meyers using Strawberries + Avocados. Excited to share this Vegan Strawberry + Avocado smoothie. I wanted to add some beautiful colors and super foods to make this a great morning pick me up. It’s a versatile smoothie to add to your recipe box by making two smoothies in one.
This smoothie uses avocado, frozen bananas and cashew milk for creaminess, raw almonds for texture, baby greens, hemp seeds, ground flax seed and bee pollen for extra superfood for the green part. Strawberries, banana, pomegranate juice, cashew milk and mint to add a natural sweetness to the pink part of the smoothie. Be creative and add your own personal touch to the smoothie when you put it together. I wanted to make sure to keep this smoothie vegan so it’s a healthier choice for you to enjoy.
