I have no idea why I have never made chili before? Maybe because I have tried some before and since I am not a big fan of beans, I tend to avoid eating them. But this chili, OMG it’s the best accidental chili I’ve ever had/made. The first time I experimented with this a few days ago, I was looking for that nice smokey flavor bacon gives and when I was getting the bacon, I saw a nice piece of ham hog and decided to add it in for more of that flavor, match made in heaven. Adding in the organic ground turkey meat and quinoa adds a good healthy option to the chili instead of using beef. Also, adding smoked gouda to top off the chili adds more of that smokey flavor I was going for. (more…)
I don’t know about you guys, but we do taco Tuesday’s at our house often, because we just love them. But, sometimes on a cold winter evening I change it up and make my super easy tortilla soup instead. Soup is one of my favorite winter meals. With this soup you get the same great Mexican flavors as if you would if having tacos, but in a soup form. It’s the perfect soup to warm up around the table with my family. It takes me about 30 minutes, if that to make this.

The season for pumpkin has officially arrived. The leaves are turning colors, the weather is cooling down. I walked into my local Fred Meyer store the other day and the all the fall colors were all over the front of the store. I spotted the pumpkins and decided to pick up a few of the smaller pumpkins and roast them for dinner. (more…)
This fall weather has me feeling all sorts of good feelings these days. It’s now the end of summer, school began 2 weeks ago and the weather has been getting a bit chilly. But, I am excited to cozy up by the fire, wear sweaters and boots, watch the leaves change outside. One of the best things about fall coming is turning on the oven to cook our dinners at home to make the house smell good and feel cozy too. I’m kind of obsessed with these mini chicken pot pies. They taste like the ultimate comfort food and are the perfect meal to have on-hand when you only need one serving at a time or you are feeding your family.
You can’t beat a one pan dinner that is on the table in no time! This one pan pasta with asparagus, spinach, sun dried tomatoes, mozzarella, garlic and prosciutto is easy and flavorful. A pasta dinner that is sure to go on repeat in our house, especially with school starting next week. (more…)
Lately I have been trying to keep our meals during the week quick and simple for my family. This simple pop tart recipe is easy to make and fun to involve kids too. Tomorrow people will be gathering in homes, bars, stadiums to celebrate a big day for Football fans. Funny thing is I am not a fan of football at all, even tough I work on women’s apparel at Nike. My husband likes to watch it once in a while and I just enjoy the gathering around good food part with the gals. Tomorrow we are off to our friends house to celebrate a birthday and let the boys and gals who enjoy watching the game watch the game and the rest of us gather around a table with some good homemade meals. I am prepping a few dishes to bring with me. Wanted to make sure there are some healthy options to enjoy besides the chilly and other heavy foods that will be provided already. (more…)
