This fall weather has me feeling all sorts of good feelings these days. It’s now the end of summer, school began last week and the weather has been getting a bit chilly in the mornings. These flaky mini chicken pot pies have me thinking of cozying up by the fire, wearing sweaters and boots and watching the leaves change outside.One of the best things about fall coming is turning on the oven to cook our dinners at home to make the house smell good and feel cozy too. I’m kind of obsessed with these mini chicken pot pies. They taste like the ultimate comfort food and are the perfect meal to have on-hand when you only need one serving at a time or you are feeding your family.
Here’s a simple recipe for an Asian style salad with Crispy Skin Salmon with Veggies and Noodles. I love using beautiful fresh green veggies like asparagus, broccolini, snow peas and spinach – all tossed in a sesame-ginger dressing along with some noodles to add a freshness to your bowl of noodles.

The first time I made these a few weeks ago I was doing an Instagram Live video and accidentally called them Hasselhoffs and that caught on and now that’s what I call them, jokingly. These would be perfect for any summer party appetizer, lunch or dinner side.These are my new favorite to serve as a side dish with meat, fish or other veggies. I also think these make an excellent appetizer for a party, game day, or any other event. I made them for a birthday party we went to this afternoon and they were a hit. It was nice to have something different on the appetizer table for sure.

Memorial Day is around the corner and I spent the day grilling outside yesterday to create this delicious Grilled Asian Salmon on one sheet with mustard dressing. Who is excited for SUMMER? Me, me, me. You know why? Because soon, it will be tomato season, grilling season, berry season and that means we will be eating caprese salads on repeat in our house. Something about the freshness of the salad from the tomatoes and basil and the creaminess of the buffalo mozzarella has me all sorts of giddy.
