If you’ve been following me for a while on Instagram, you probably noticed how much I LOVE TOAST. I will never get bored with eating it, making it and coming up with fun ways to dress it up. From avocado to poached eggs or last night’s leftovers, the possibilities are endless. Mediterranean flavors came to mind when I was thinking of what to top this lovely toast with, so I created a creamy, velvety white bean spread.
Remember me posting about how excited I was about attending Feast Portland about a week or so ago. Well I can’t wait to share some of my favorite photos of food I tried in the next post. But for now I will share a bit about my new kitchen appliances from Wolf Gourmet.
I got to work with Wolf Gourmet and shoot some photos for them at Feast this past weekend. Their products are so sleek, modern, powerful and just stunning. I was so glad to add some of their products to my kitchen collection, especially excited about the beautiful blender. I created a quick healthy smoothie before heading out for the day of feasting. One of my favorite treats to make for my kids are waffles, and I don’t only make them for breakfast, sometimes it’s an after dinner treat. I decided to kick these up a few notches and make them special. I added some really good quality cocoa powder and my favorite spice, cardamon. (more…)
Lately I have been trying to keep our meals during the week quick and simple for my family. This simple pop tart recipe is easy to make and fun to involve kids too. The weather in Portland has been so beautiful lately, which means the abundance of berries are starting to show up everywhere along with the bounty of rhubarb. Being from the East Coast, I enjoy a good bagel with lox, capers, tomatoes and onions. I also love homemade eggs benedict with farm fresh eggs, salmon and fresh greens with a homemade lemony-dill hollandaise sauce. I decided to put together two of my favorite things and make this eggs benedict on a croissant instead, topped with quick pickled red onions, capers, fresh greens. Easter and Mothers Day is around the corner and I thought that this would make a perfect Easter or Mother’s Day Brunch with family and friends for you to try out. (more…)

My husband and I spent the evening last night in bed after we put the kids down watching funny videos and food videos on BuzzFeed, then woke up craving french toast for breakfast. I went to get the ingredients from my local Fred Meyers. I usually get Challah bread and make individual french toast, but this morning I wanted something a little more different so i got some mini croissants, cut them into smaller chunks, added chunks of softened cream cheese and had some frozen blueberries… add the custard and you have a party in your mouth. I’m working on a few recipe developments for Fred Meyers using Strawberries + Avocados. Excited to share this Vegan Strawberry + Avocado smoothie. I wanted to add some beautiful colors and super foods to make this a great morning pick me up. It’s a versatile smoothie to add to your recipe box by making two smoothies in one.
This smoothie uses avocado, frozen bananas and cashew milk for creaminess, raw almonds for texture, baby greens, hemp seeds, ground flax seed and bee pollen for extra superfood for the green part. Strawberries, banana, pomegranate juice, cashew milk and mint to add a natural sweetness to the pink part of the smoothie. Be creative and add your own personal touch to the smoothie when you put it together. I wanted to make sure to keep this smoothie vegan so it’s a healthier choice for you to enjoy.
Ever since my sister and I were little I remember my mom making her delicious recipe for blinchiki or how some people like to call them crêpes or blintz. The sweet aroma that fills the air when she carefully stands at the stove and makes one after another… which sometimes doesn’t even make the plate that she puts it on since my sister or I would take it and eat it right there and there with nothing on it.
